Caramelized carrots, beets, and potatoes with a maple-mustard glaze.
Ingredients
- 4 medium Carrots
- 2 medium Beets
- 1 lb Baby potatoes
- 2 tbsp Maple syrup
Directions
- Preheat oven to 400°F.
- Toss chopped vegetables with oil, maple syrup, mustard, salt, and pepper.
- Roast 35–40 minutes until tender and caramelized.
