  • 4 medium Carrots
  • 2 medium Beets
  • 1 lb Baby potatoes
  • 2 tbsp Maple syrup
Directions
  1. Preheat oven to 400°F.
  2. Toss chopped vegetables with oil, maple syrup, mustard, salt, and pepper.
  3. Roast 35–40 minutes until tender and caramelized.

Directions

  2. Sauté tomatoes in olive oil until blistered.
  3. Toss pasta with tomatoes, basil, mozzarella, and reserved water.
